How do you know which metal hybrid irons to use instead of a 3, 4 and 5 iron.?

How do they differ from a 9 wood or an 11 wood?

Usually they will say what iron they replace. The best way to be sure is just to ask someone at the store, and they will know. You can also check the loft of the club and see what club it replaces. Here are some averages, they vary by club manufacturer.
1i: 15 degrees
2i: 18 degrees
3i: 21 degrees
4i: 24 degrees
5i: 27 degrees

whatever loft it says on the hybrid will tell you what iron it replaces.

Hybrids are different from woods in the fact that they have smaller heads and are meant to replace your long irons. 9 and 11 woods aren't that common, but most of the time for lower woods they go a little bit farther then the hybrid, but a hybrid is easier to hit straight and be accurate with.
